Garden Fresh Salsa

I was SO excited when the veggies in my garden started ripening. Because I'm obsessed with homemade salsa, my garden consists mostly of tomatoes and peppers. My two favorite recipes are corn salsa and Bekah's Salsa (recipe below) which I made tonight. Bekah's Salsa
Chop and Combine:
6 Roma Tomatoes (I usually add more b/c I LOVE tomatoes!)
1/4 cup onion
1/4 cup cilantro
1 Tomatillo Pepper
1 Jalapeno (I don't include the seeds; they're way too hot for me.)
Add:
1 tsp apple cider vinegar
1 tsp salt
juice from one lime

Sometimes I chop everything but other times, when I'm feeling lazy, I put everything in the blender. Both strategies create a great ending result.
Here's what I enjoyed tonight. Try it out and let me know what you think. Remember that including veggies in your diet doesn't have to be the same boring salad every night. Mix it up a little with something different.
