You Want a Salad With That?

Over the weekend I decided a new goal of mine is to have a salad every night with our meal. Also, I decided I need more vegetables in my life. (Sometimes I get really into fruit and forget about veggies). My husband is working on dropping a few pounds, and I, being pregnant, should be thinking more about my leafy green friends than I have been, so today when I bought my groceries I stocked up on lettuce and salad-friendly vegetables. Maybe some of you do this all the time, and I used to when I was single, but I came home with a plan to wash and chop everything so it was readily available for snacking, salading, and lunches. It only took me about 30 minutes and I ended up with about 6 or 8 containers full of ready-to-go celery, bell pepper, carrots, cucumber, pineapple, lettuce, broccoli, and grapes. I also made a thing of ranch (made with 1% milk and low fat mayo) to send with my husband to school so he will actually eat the salad and veggies I pack in his lunch. The point I'm trying to make is that when healthy snacks are ready and available everyone benefits and it only takes a little bit of time. Besides, what snack is more healthy than broccoli?

Thanks Bek...I totally need to do that. Too often I buy the veggies, put them in the fridge and forget about them. Now I'm remotivated to have my family become more of a "salad" family too.

So I was reading along thinking that Emily had a really good goal. . . when I got the part about her being PREGNANT! It took me a second to realize that the advice was coming from Beks. Good advice . . . and my heart rate is back to normal!
